  • 4 large tortillas or wraps
  • 400g tin of tomatoes
  • 1 tbsp vinegar (white wine or cider vinegar is best)
  • 100g cheddar cheese - coarsely grated
  • Your choice of sour cream, thinly sliced avocado, roughly chopped coriander, and thinly sliced green chillies to serve
  • 1 x FILLING (p52-101)
  • 1 x BEANS (p194-201) to serve
  • 1 x ESSENTIAL MEXICAN SALAD VEG (p192) to serve

Very tasty. The 4/5 was purely down to the adaptations I had to make due to making with wheat free pancakes instead of wheat tortillas (due to a family members intolerance) so the texture was a bit softer. The filling and sauce were great. Filled with Carne Molida and topped with Cebollas Curtidas.

Great job adapting the recipe to make a gluten-free version - it certainly looks like a vibrant fiesta of flavours!
