Shopping List
  • 500g beef or pork mince or soya mince for a veg version
  • 1 bunch of spring onions
  • 1 onion
  • 2 cloves of garlic
  • 75g cheddar cheese
  • 75g mozzarella cheese
  • 150ml cream (any type)
  • 4-6 large tortillas or wraps (depending on the size of your baking dish!)
  • 400g tin of tomatoes
  • Essential Mexican salad veg (p192) and sour cream to serve

  • Large lidded pan
  • Blender
  • Medium saucepan
  • Baking dish

Love this…. We crumbled some nachos on top to give it a bit of crunch, wow it’s filling and packed full of flavour

This was a triumph..........All the family loved it. Simple and straight forward and delicious served with a selection of essential salads! This will become a regular at our supper table!

The enchilasagne is definitely a crowd-pleaser, that's for sure! Great to hear that this went down a treat with everyone, Jane, and hopefully you'll enjoy it many more times to come!

Really and tasty and easy to follow recipe. We switched the cream for a healthier crème fraîche and topped with chopped coriander.

Yum - this looks delicious, Amelia! Great job! We love the vibrant pop of colour from the onions and coriander.
