Fresh fruit is incredibly popular in Mexico, where huge quantities are consumed in drinks, snacks, for breakfast and in desserts. Here we've got a delicious Mexican take on a fruit salad, layered up with whipped cream and toasted, caramelised nuts and seeds.

600g tropical fruit (eg papaya, pineapple, watermelon, mango, banana etc)
300ml double or whipping cream
50g mixed nuts or seeds (a mixture of pumpkin seeds and flaked almonds works well)
