In Ethiopia, injera, a type of fermented flatbread a bit like a South Indian dosa, is used as both the plate for all the different dishes in the meal as well as the cutlery for scooping everything up! Here we’re serving the injera with a beef stew known as sega wat, and a smooth bechamel-like sauce known as shiro which is flavoured with a fragrant spice blend called berbere (pronounced ber-bear-ray). A simple potato and carrot dish, refreshing salad, cooling cottage cheese topped with nigella seeds and fiery awaze chilli sauce complete this vibrant meal.

Good meal. Found Shiro a tad bland. Took a couple of failed attempts at the Injera but the successes were great. Loved the Awaze chilli sauce, Atakilt Wat and cottage cheese.

This was my second spice box after my daughter bought me a subscription fir my birthday. We all absolutely loved this. As a fan of fenugreek, this discovery of berbera the Ethiopian spice is life changing!!!
