Groundnut (peanut) curry, or nkatenkwan, is a rich and spicy dish, a favourite of our Gifty’s from her home country of Ghana on the west coast of Africa. Lots of West African food is accompanied by a fiery chilli sauce on the side to liven everything up. All that’s needed is some plain rice and coleslaw or salad to complete the meal.

800g diced beef
2 medium onions
2 cloves of garlic
Coleslaw or salad to serve
200ml full fat coconut milk
1 tbsp tomato puree
2 tbsp vinegar (white wine or cider vinegar is best)
50g peanuts (roasted and salted are fine)
Rice to serve
