Goan Fish Curry with Lime Pickle ~ Mole Poblano with Pico De Gallo
Authentic Goan food is one of the reasons tourists flock to this glorious coastal state in the west of India. The long period of Portuguese rule, besides that of the Muslim and Hindu kingdoms, has left a lasting influence on Goan cooking - an exotic mix of truly tasty and spicy cuisine! Here we've got a hot and tangy fish curry using spices that are toasted for extra depth of flavour, which work beautifully with the rich coconut sauce. The curry is served here with rice, poppadoms, salad and a quick-to-make, tangy lime pickle.

Puebla is a beautiful Spanish colonial city renowned for its delicious traditional cuisine. Here we’ve got mole poblano, an ancient dish that has been called the ‘national dish’ of Mexico and features chillies, fruit, nuts and spices along with chocolate to counteract the heat of the chillies. We're serving it with a refreshing pico de gallo on the side.

Pickle Seeds: brown MUSTARD, cumin, fennel, nigella, chilli
Goan Masala: coriander, fennel, yellow MUSTARD, cumin, black pepper, fenugreek, Kashmiri chilli, turmeric, paprika

Pico De Gallo Blend: coriander leaf, green bell pepper, green chilli

Goan Fish Curry with Lime Pickle:
- 250g firm-fleshed white fish fillets cut into bite-size pieces or whole prawns, or use cauliflower broken into small florets for a veg version
- 3 tomatoes
- 1 small onion
- 3 cloves of garlic
- Fresh ginger
- 2 green chillies
- 2 limes
- 1 tbsp tomato puree
- 200ml full fat coconut milk
- 65ml oil (sunflower or vegetable oil is best)
- Rice and poppadoms to serve
Mole Poblano with Pico De Gallo 2022:
- 2 chicken legs or large thighs or use ½ a butternut squash cut lengthways into large wedges for a veg version
- 2 tomatoes
- Sliced avocado to serve (optional)
- 1 small red onion
- 2 cloves of garlic
- 10g bunch of coriander
- 1 lime
- 10g dark chocolate
- 25g ground almonds
- 20g raisins
- Rice and sour cream to serve
