Shopping List
  • 500g cherry tomatoes - halved
  • ½ cucumber - quartered, deseeded and cut into bite-size pieces
  • 1 green pepper - deseeded and cut into bite-size pieces
  • 1 small red onion - quartered and very thinly sliced
  • 100g feta cheese - cut into bite-size pieces
  • 50g black olives
  • 2 tbsp red wine vinegar
  • 3 tbsp extra virgin olive oil
  • 1 ½ tsp dried oregano (optional)

Simple and quick to make - yet so flavoursome. Evening my “I don’t like feta” husband loved it!!!! (Including the feta!)

What's not to love about an authentic greek salad. So much more fragrant when made fresh and you can go large on the olives and feta. It's like summer in a bowl
