  • 1 medium carrot - peeled and coarsely grated
  • 1 medium onion - finely chopped
  • 2 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 2 tsp
  • 10g bunch of coriander - finely chopped
  • 50g natural yogurt (full fat is best)
  • 2 tbsp tomato puree
  • 175g self-raising flour (plus extra for rolling)

This had an excellent what I call 'effort to deliciousness ratio'!! The dumplings were great, I used spelt flour (adding baking powder as raising agent) and the texture was nice & chewy, almost meaty which made it a good hearty dish. Served here with saag aloo and cabbage & pomegranate salad which I found to be a lovely combo!

This all looks incredible, Lauren - great job! It's really interesting to hear that you used spelt flour for the dumplings, sounds like it worked a treat!

Sunday night curry feast featuring Gujarati muthiya, Punjabi chole, and palak dhal. Great way to end the week and looking forward to lunches at work next week. Thanks for more great recipes!
