- 3 tomatoes
- 1 onion
- 2 cloves of garlic
- 1 tbsp vinegar (white wine or cider vinegar is best)
- 8 eggs (any size)
- 8 mini soft corn tortillas or wraps
- 1 tbsp oil (sunflower or vegetable oil is best)
- Mixing bowl
- Large frying pan

Super-easy to create and works well with a number of Mexican dishes. Roasting the veg in the oven works just as well as grilling. Suggest doing a big batch and freezing portions to use as part of a quick Mexican brunch.
