Hungarian Porkolt with Dill Pickles
The three classic dishes of Hungary - goulash, paprikas and porkolt - are all simple stews of diced meat and onions, but the crucial ingredient is always the world famous Hungarian paprika. The Ottoman Turks introduced the capsicum plant to Hungary in the 16th Century, though it didn’t really gain widespread popularity until the 19th Century when growers produced the paprika pepper with a consistent mild heat level and beautiful bright colour.
