  • 1 small onion
  • 3 cloves of garlic
  • A handful of roughly chopped parsley or coriander to serve (optional)
  • 75g Greek yogurt (full fat is best) to serve (optional)
  • 200g tinned tomatoes (½ a standard-size tin)
  • 1 ½ tsp sugar
  • 120ml extra virgin olive oil
