Poutine, or chips, curds and gravy is the national dish of Quebec, Canada where it was invented in the 1950’s. The original version has now been recreated in various forms including Cajun, Mexican, Italian and BBQ but here we’re giving it a delicious Indian spin.

The traditional meat gravy is replaced with a spicy balti version, the curds with Indian paneer cheese and the whole thing is topped with chicken tikka pieces, cucumber pickle and a hot and tangy chilli ketchup. On the side we’ve got a crunchy, fresh kosambari salad and onion rings coated in a bhaji batter.

Description

Balti Gravy Spices: turmeric, Kashmiri chilli, cumin, cinnamon, coriander, paprika, smoked paprika, fenugreek leaf, tamarind (tamarind, cornstarch), onion

Pickle Spices: red bell pepper, green bell pepper, yellow MUSTARD, turmeric

Kosambari Spices: brown MUSTARD, cumin, amchur, salt, chilli, black pepper, coriander, ginger, ajowan, mint, asafoetida

Batter Spices: coriander, cumin, black pepper, fenugreek, turmeric, ginger, brown MUSTARD, green cardamon, cinnamon, cloves, chilli, yellow MUSTARD, black cardamon, ginger, mace, bay, nutmeg

Chilli Ketchup Blend: chilli

Paneer Spices: cumin, turmeric, coriander, black cardamon, fenugreek

  • 500g diced chicken (thighs are best)
  • 1 large onion
  • ½ cucumber
  • ½ small white cabbage
  • 2 medium carrots
  • 100g natural yogurt (full fat is best)
  • 30g butter
  • 226g paneer cheese
  • 1 chicken stock cube
  • 50g tomato puree
  • 3 tbsp sugar
  • 160g self-raising flour
  • 90ml vinegar (white wine or cider vinegar is best)
  • Oil for frying (sunflower or vegetable oil is best)
  • 1kg oven chips (skin-on are best) or make your own

Super innovative twist on a Canadian classic. The onion rings and the chill ketchup are a match made in fusion heaven.

Didn’t make the pickles as only 1 out 4 likes cucumber. Everything else was really tasty. Made our own wedges and held back with only half the spices for the ketchup (thank goodness) but every last scrap was eaten by two adults and two teens.

We cooked the Indian style poutine with chicken tikka and chilli ketchup last night. Absolutely gorgeous! What a great fusion of styles. Easy to cook and tasty. Can’t wait for my next box.

Another amazing subscription box. Every mouthful was different. The Balti Gravy was really tasty. The Onion Bhaji Rings were really moorish. This was a fun one to make. We will definitely try some more paneer recipes after this one. This was another great way to try flavours from around the world.
