Indo-Chinese Kathi Rolls with Tamarind Hoisin Sauce and Turmeric Raita

The kathi roll, which hails from Kolkata (formerly Calcutta) in Bengal, consists of an Indian bread on which a thin omelette is cooked, then the whole thing is filled and rolled up like a large fajita. With a significant Chinese population, Kolkata is known for its Chinese-inspired Indian dishes, so we've filled our kathi roll with some big Chinese flavours. Homemade chive parathas are stuffed with sticky Sichuan pepper and chilli chicken, a hoisin flavoured tamarind sauce, a fiery chilli sauce and a turmeric and nigella raita. On the side we've got a smashed cucumber salad and a traditional Chinese stir-fried pepper and potato dish known as di san xian which we've freshened up in the style of an Indian chaat salad with lemon, tomato and coriander.

Tamarind Blend: tamarind (tamarind, cornstarch), amchur, star anise, Sichuan pepper, fennel, cassia, cloves

Di San Xian Blend: white pepper, white SESAME, garlic, ginger, chives

Cucumber Spices: white SESAME, black SESAME, mild chilli flakes

Paratha Blend: chives, garlic

Chilli Sauce Spices: red bell pepper, chilli, garlic, Kashmiri chilli, onion

Raita Blend: nigella, turmeric

500g diced chicken (thighs are best)
500g new potatoes
1 large red onion
1 bunch of spring onions
2 peppers (any colour) 
3 tomatoes
1 cucumber
25g bunch of coriander
1 lemon
150g natural yogurt (full fat is best)
3 eggs (any size)
250g plain flour (plus extra for rolling)
1 tbsp tomato puree
1 tbsp vinegar (rice, white wine or cider vinegar is best)
75ml soy sauce (any type)
35g sugar

Fun in the sun! Brilliant recipe - everyone loved the main dish and the breads and the sides - though I think the favourite favourite was the amazing Di San Xian Chaat Salad. So glad I ordered two boxes so we can do this again!
