Indo-Chinese Kathi Rolls with Tamarind Hoisin Sauce & Turmeric Raita

The kathi roll, which hails from Kolkata (formerly Calcutta) in Bengal, consists of an Indian bread on which a thin omelette is cooked, then the whole thing is filled and rolled up like a large fajita. With a significant Chinese population, Kolkata is known for its Chinese-inspired Indian dishes, so we've filled our kathi roll with some big Chinese flavours! Homemade chive parathas are stuffed with sticky Sichuan pepper and chilli chicken, a hoisin flavoured tamarind sauce, a fiery chilli sauce and a turmeric and nigella raita. On the side we've got a smashed cucumber salad and a traditional Chinese stir-fried pepper and potato dish known as di san xian which we've freshened up in the style of an Indian chaat salad with lemon, tomato and coriander.

  • 150g natural yogurt (full fat is best) or dairy-free alternative
  • 3 eggs (any size)
  • 250g plain flour (plus extra for rolling) or gluten-free alternative
  • 1 tbsp tomato puree
  • 1 tbsp vinegar (rice, white wine or cider vinegar is best)
  • 75ml soy sauce (any type) or gluten-free alternative

We replaced the chicken with firm smoked tofu to make it veggie but it was delicious! We enjoyed cooking it and eating it

Really nice, quite a lot of prep but easy to follow and delicious.

We really hope the time spent preparing and cooking this meal was worth it when you got to enjoy the flavours in the finished dish. It certainly looks delicious!
