Israeli cuisine is a fantastic fusion of North African, Middle Eastern and Mediterranean flavours and uses lots of pulses, grains and vegetables which make it the perfect cuisine for a vegetarian diet. Here we’ve got a popular sandwich known as sabich - flatbreads are topped with hummus, aubergine, boiled eggs, pickles and a fiery hot sauce from Yemen (that the Israelis have taken to with great gusto!) known as zhug. On the side we’ve got 2 salads - a wintery version of the Middle Eastern favourite tabbouleh and a delicious roasted cauliflower salad topped with a rich tahini dressing.

  • 1 cauliflower
  • 2 aubergines
  • ¼ red cabbage
  • ½ cucumber
  • 25g bunch of parsley or mint
  • 25g bunch of coriander
  • 2 lemons
  • 1 clove of garlic
  • ½ pomegranate - seeds only (or 100g ready-prepared seeds)
  • 4 eggs (any size)
  • 200g plain flour (plus extra for rolling)
  • ½ tsp dried yeast
  • 125g tahini or use nut butter (with no added salt or sugar)
  • 2 tbsp vinegar (white wine or cider vinegar is best)
  • 1 tbsp sugar
  • 60g coarse bulgur wheat or couscous
  • 400g tin of chickpeas
  • 195ml good quality olive oil
