Jamaican cooking demonstrates fusion food at its very best - combining the use of Indian spices, European herbs, indigenous ingredients and African cooking techniques. The result is a cuisine that’s hearty, robust and full of flavour! To begin our meal we’ve got a pickled fish dish known as escovitch served with sweet potato cakes.

For the main event is the ubiquitous jerk chicken - no busy street in Kingston would be complete without the smell of grilled jerk chicken lingering in the air. Here it’s served with the traditional accompaniments of rice & peas, a chopped salsa and a hot pepper sauce.

Spices Included

PEPPER FLAKES: Green pepper, habanero

ESCOVITCH FISH BLEND: Bay leaf, ginger, black pepper, mace, allspice

SWEET POTATO SPICES: Allspice, cumin, chilli, thyme, chives, black pepper

JERK MARINADE SPICES: Allspice, black pepper, thyme, cinnamon, nutmeg, cloves, cayenne, garlic powder, chilli flakes

RICE SPICES: Thyme, allspice

HOT SAUCE SPICES: Red pepper flakes, habanero, garlic, chilli

SALSA SPICES: Paprika flakes, coriander leaves, allspice, ginger

Shopping List
  • 4 x 250g chicken leg portions 
  • 300g firm fleshed white fish fillet 
  • 1 bunch of spring onions 
  • 2 cloves of garlic 
  • Fresh ginger - roughly chopped to make 2 tsp
  • 500g sweet potatoes
  • 1 red pepper 
  • 2 tomatoes 
  • 1 avocado and 1 ripe mango OR ½ a cucumber 
  • 1 lime
  • 250g standard long grain (not easy cook) or basmati rice
  • 60g flour (any type is fine!)
  • 400g tin of kidney beans
  • 200ml coconut milk (½ a standard-size tin or use a pouch)
  • 1 tbsp sugar (dark brown is best!)
  • 75ml vinegar
  • 3 tbsp soy sauce or gluten free alternative
  • 1 tbsp tomato puree
