The Indonesian island of Java is home to over 145 million people - a diverse population made up of mostly indigenous cultures. Over 90% of the population is Muslim so chicken and seafood are widely eaten there, with rice, corn and coconut being grown around the island. Here we have a rich chicken curry flavoured with turmeric, cassia and lemongrass served with crispy corn (jagung) fritters. There are over 300 varieties of sambal in Indonesia - no meal would be complete without the spicy condiment! - so on the side we've got a version called sambal bajak along with a popular Javanese salad known as urap sayur.

  • 500g diced chicken (thighs are best)
  • 100g cooked, peeled prawns (any type)
  • 500g new potatoes
  • 200g green beans
  • 150g beansprouts
  • ½ cucumber
  • 2 tomatoes
  • 200g shallots or 1 large red onion
  • 4 cloves of garlic
  • Fresh ginger
  • 1 lime
  • 2 eggs (any size)
  • 198g tin of sweetcorn
  • 70g cornflour
  • 1 tbsp sugar
  • 20g desiccated coconut
  • 400ml full fat coconut milk
  • 300g basmati or standard long grain rice
  • Oil for frying (sunflower or vegetable oil is best)

Paused just long enough to take a picture! A lovely mixture of flavours and textures and can't go wrong with a prawn fritter starter.
