Shopping List
  • 50g pomegranate seeds
  • 20g bunch of parsley, mint or coriander - roughly chopped
  • ½ lemon
  • 200g couscous
  • 50g dried fruit (eg raisins, dates, apricots etc) - cut into large bite-size pieces if large
  • 30g nuts (eg almonds, pistachios, hazelnuts etc) - cut into large bite-size pieces if large
  • 3 tbsp extra virgin olive oil

Needed some quick and easy carbs after gym and swim. No pomegranite on hand so I used grapefruit pieces. So good to have some real food as fast food.

Anything with pomegranate seeds is fine by me! The additions (along with nuts and dried fruit) are a very simple way of jazzing up cous cous, plus the spices add a warming fragrance. Loved by the whole family!

We have to agree this recipe really sparkles like a beautiful Jewell!
