Unusually for a Thai curry, it does not contain coconut milk but still features the same amazing balancing act of strong flavours - salty, sour, sweet and hot - so familiar to Thai cuisine. 

Shopping List
  • 500g diced pork 
  • 1 large aubergine - cut into bite-size pieces
  • 150g shallots or 1 medium red onion - roughly chopped
  • 2 cloves of garlic - roughly chopped
  • Fresh ginger - peeled and roughly chopped to make 1 tbsp
  • 20g bunch of coriander - leaves and stalks separated and roughly chopped 
  • 2 lemongrass stalks - bashed with a rolling pin then cut into 3cm lengths
  • ½ lime
  • 1 tbsp tomato puree
  • 1 tbsp fish sauce

Nice and easy prep. and no compromise on taste. Like this different way of cooking aubergine. Didn't have lemongrass so substituted, will have to try again with it.

Jungle curry and tomato rice, super easy, super tasty!

YUM we love the amazing balancing act of strong flavours - salty, sour, sweet and hot in this dish, delicious!

We enjoyed this but the aubergine broke down quite a lot and formed the sauce. A good curry but lacking a bit more spice or a sour kick for our personal taste. Great to try another of the world curries gradually working our way round the world!
