Katsu Curry with Pickles ~ Tandoori Chicken with Mango Chutney

Katsu Curry with Pickles:
Curry or 'kare' is one of Japan’s national dishes - a mild curry sauce thickened with flour and vegetables often served with 'katsu' (breaded and fried) pork, chicken or tofu. This dish didn’t exist in Japan until the British introduced curry powder there about 100 years ago, after inventing curry powder during their occupation of India in order to distribute new-found Indian spices. We’re serving it with sesame rice and some crunchy pickles flavoured with ginger and yellow mustard.

Tandoori Chicken with Mango Chutney:
Tandoori is one of the simplest and best known Indian dishes - a favourite in Indian restaurants around the world. While traditionally cooked in a tandoor oven at very high temperatures (which gives it that nice charred look we all recognise), the same results are not too difficult to achieve at home in a very hot oven. We’re serving the chicken with another restaurant classic - saag aloo - and sweet, spicy mango chutney!

Katsu Curry with Pickles:

  • 300g pork steak, chicken breast or tofu
  • 1 small onion
  • 1 medium carrot
  • ½ cucumber
  • 1 clove of garlic
  • 1 large egg
  • 35ml vinegar (white wine or cider vinegar is best)
  • 200g Japanese sushi rice or use risotto or paella rice
  • 50g breadcrumbs (Japanese panko are best)
  • 1 tbsp soy sauce (any type)
  • 40g plain flour
  • 2 ½ tsp sugar

Tandoori Chicken with Mango Chutney:

  • 2 chicken legs or large thighs or 226g diced paneer cheese for a veg version
  • 500g new potatoes
  • 1 medium mango (or 200g ready-prepared)
  • Fresh ginger
  • 200g spinach (fresh or frozen)
  • 150g natural yogurt (full fat is best)
  • 80g sugar
  • 3 tbsp vinegar (white wine or cider vinegar is best)
  • Naans to serve

Both were really good recipes, the Tofu Katsu maybe just ahead of the Tandoori Paneer!
