It's cooked until all of the liquid has evaporated and the meat is starting to fry and crisp around the edges, which really concentrates the flavours and makes this simple curry incredibly delicious. It's pairs perfectly with the fresh tomato chutney on the side, which provides a real contrast.

  • Chutney Spices: brown MUSTARD, nigella, fenugreek, cumin, chilli, curry leaf
  • Curry Blend: Kashmiri chilli, black pepper, cumin, coriander, turmeric, brown MUSTARD, black cardamon, green cardamon, ginger, cinnamon, cloves, mace, bay, nutmeg, chilli
  • Whole Spices: cinnamon, star anise, curry leaf

  • 200ml coconut milk (full fat is best)

Brilliant Keralan curry with a great flavour, and punchy chutney on the side. Added a smashed cucumber salad for some extra freshness.

Looks like a lovely curry and those bowls are brilliant too, happy spicing!
