Kofta - originating in the Middle East but now eaten all throughout India - are a type of meatball made from ground, seasoned meat. They can either be served grilled, as a type of kebab, or simmered in a sauce. Here, they’re cooked in a rich tomatoey sauce flavoured with two spices that go particularly well with lamb: cinnamon, which is sweet and warming, and black cardamon, which adds a lovely, smoky menthol flavour. On the side, we’ve got a fancy Moghul-style pilau rice dish flavoured with saffron, green cardamon, cashew nuts and raisins plus a simple but delicious pepper and potato dish known as aloo shimla mirch and a fiery gajar (carrot) pickle. Finally there’s a tangy lemon raita to cool everything down. With all the bright colours and vibrant flavours, this makes a fantastic spread to brighten up the depths of winter.

  • 3 onions
  • 4 cloves of garlic
  • Fresh ginger
  • 1 large carrot
  • 1 lemon
  • 2 peppers (any colour)
  • 500g new potatoes
  • 150g natural yogurt (full fat is best) or dairy-free alternative
  • 400g tin of tomatoes
  • 300g basmati or standard long grain rice
  • 50g raisins or sultanas
  • 50g unsalted cashew nuts or flaked almonds
  • 100ml oil (sunflower or vegetable oil is best)
  • 2 tbsp vinegar (white wine or cider vinegar is best)
  • 1 tbsp sugar
  • 1 tbsp tomato puree

A kaleidoscope of amazing flavours, colours and textures. Each element compliments the others perfectly. A pitch perfect symphony of spice. The spicery box has been the highlight of our month and kept us going during lockdown!

Lovely aromatic saffron pilau. (I normally use turmeric, as saffron is an expensive spice!) Mild kofta curry sauce, the spicy heat being provided by the gajar pickle. (Cooled down by the lemony raita!) ... and another gorgeous side dish in the form of the aloo shimla mirch. All in all, an excellent (Saturday) curry night.

Fabulous combination of flavours. As a vegetarian I had to adapt it a bit and made mushroom and nut koftas which worked really well. There is a great contrast between the peppery aloo, the warming kofta, the fiery pickle, the sweet rice and the cooling lemon raita

This all looks delicious, and it sounds like you did a great job of adapting the recipe to make a veggie version. We're so happy to hear how much you enjoyed it!

Determined spice lievel was much too high, more of a tomato taste than curry. meatballs ended up being very overcooked if you followed the timing provided on the recipe card.

Thanks for your feedback on this dish, we'll certainly take another look at the timings and the heat level.

Absolutely delicious, every mouthful of it. I found this the easiest so far to make and had a wonderful time with my fiancé making this. The koftas tasted professionally made and the gajar pickle and aloo shimla mirch perfectly complimented the main curry and rice. Would 1000% make again! This is a dish to show off to friends and family!

Not enough potatoes so added a leek but otherwise as instructed. Enough for 3 meals and totally divine. The carrot chutney a real find so more of that will always be welcome. The glasses in the middle were Vodka for my lady and Fizz for me. Thank you so much.
