Kofta - originating in the Middle East but now eaten all throughout India - are a type of meatball made from ground, seasoned meat. They can either be served grilled, as a type of kebab, or simmered in a sauce. Here, they’re cooked in a rich tomatoey sauce flavoured with two spices that go particularly well with lamb: cinnamon, which is sweet and warming, and black cardamon, which adds a lovely, smoky menthol flavour. On the side, we’ve got a fancy Moghul-style pilau rice dish flavoured with saffron, green cardamon, cashew nuts and raisins plus a simple but delicious pepper and potato dish known as aloo shimla mirch and a fiery gajar (carrot) pickle. Finally there’s a tangy lemon raita to cool everything down. With all the bright colours and vibrant flavours, this makes a fantastic spread to brighten up the depths of winter.

  • 500g lamb or beef mince
  • 3 onions
  • 4 cloves of garlic
  • Fresh ginger
  • 1 large carrot
  • 1 lemon
  • 2 peppers (any colour)
  • 500g new potatoes
  • 150g natural yogurt (full fat is best) or dairy-free alternative
  • 400g tin of tomatoes
  • 300g basmati or long grain rice
  • 50g raisins or sultanas
  • 50g unsalted cashew nuts or flaked almonds
  • 100ml oil (sunflower or vegetable oil is best)
  • 2 tbsp vinegar (white wine or cider vinegar is best)
  • 1 tbsp sugar
  • 1 tbsp tomato puree
