There are thousands of types of kofte in the Middle East, but the key things to concentrate on are always to get the mince mixture nice and smooth for the softest texture, grill over a very high heat to char the kebabs properly but still be juicy inside, and to keep brushing with fat as they cook to keep them nice and moist!

So easy to make and cook. Great as a mezze mains or as a wrap for food on the go. Delicious.

Glad you enjoyed this fantastic and versatile kebab!

We had this delicious dish with moroccan tomato and pepper dip and cucumber yoghurt. I will be honest my blender broke while mixing the mince so the tomato dip was more rustic than intended and mince was smoothed by hand. It still tasted delicious though and we really enjoyed these hand made kebabs.

I have to update you. Blender had a trip switch I didnt know about. I am ready for action again. Yay
