Kolhapur, a city in the south central part of India in the state of Maharashtra, is renowned for its spicy cuisine and this delicious chicken curry is no exception. An integral part of the dish is the goda masala, a special blend of darkly toasted spices and coconut that creates a delicious savoury flavour.
Each household in Kolhapur will have its own secret blend with adjustments to which ingredients are used, proportions of the ingredients and the level of toasting. It’s served with some tangy lemon rice, a cooling coconut raita, a classic pea and potato dish known as aloo matar and a simple onion and cucumber salad.
