Korean BBQ with Ssamjang Sauce

In Korea BBQ is known as bulgogi which literally translates as ‘fire meat’. It originated in the Pyongan province of North Korea but is now incredibly popular in South Korea, too where it’s cooked at indoor BBQ restaurants. The key flavouring is the vibrant red gochugaru, or Korean chilli flakes, which are traditionally dried in the sun to produce a lovely sweet and slightly smoky flavour with a delicious yet not too fiery heat.

Beef Marinade: ginger, garlic, black pepper, yellow MUSTARD

Kimchi Spices: coriander, garlic, onion, chives, Korean chilli

Ssamjang Sauce Spices: Korean chilli, white SESAME, garlic, ginger

Allergens are listed in CAPITALS

  • 600g beef steak, pork steak, chicken breast or tofu for a veg/vegan version
  • 1 medium Chinese cabbage
  • 2 little gem or 1 round lettuce
  • 1 bunch of spring onions
  • 60ml soy sauce (any type)
  • 3 tbsp vinegar (rice, white wine or cider vinegar is best)
  • 40g sugar
  • Sushi rice to serve
  • Mixing bowl x 2
  • Medium saucepan
