Kukul Mas with Seeni Sambol and Cucumber Salad:
In Sri Lanka chicken curries are known as kukul mas. Hundreds of different versions exist, each with their own specific blend of spices which are usually very darkly roasted to give a delicious, deep and complex flavour. Key spices in Sri Lankan cuisine include cinnamon, curry leaves, mustard seeds, chilli and lemongrass, an ingredient more commonly associated with Southeast Asian cuisine. On the side of the chicken curry we've got a fiery seeni sambol and a cooling cucumber salad.

Cajun Blackened Chicken with Dirty Rice:
‘Blackening‘ is a modern technique associated with Cajun cookery and involves the caramelisation of spices on the outside of chicken or fish to create a delicious edible crust. The chicken is served here with two Cajun staples - a fiery hot sauce and dirty rice (a delicious concoction of rice, vegetables and traditionally chicken liver or sausage).

Seeni Sambol Blend: chilli, cinnamon, curry leaf, green cardamon

Kukul Mas with Seeni Sambol and Cucumber Salad:

• 2 chicken legs or large thighs (skin removed if you prefer), or use 300g root veg (eg carrots, parsnips, potatoes etc)
• 1 medium red onion
• 2 cloves of garlic
• Fresh ginger
• ½ cucumber
• 1 lime
• 10g bunch of coriander
• 200ml coconut milk (full fat is best)
• 1 tsp sugar
• Rice to serve

Cajun Blackened Chicken with Dirty Rice 2023:

• 2 x 150g chicken breasts butterflied to make them all roughly the same thickness, or salmon fillets, or use 300g extra-firm tofu
• 50g chorizo, smoked sausage, bacon or chicken liver, or use vegan chorizo or bacon for a veg version
• 1 small onion
• ½ lemon
• 25g butter
• 150g long grain or basmati rice
• 1 tbsp tomato puree
• 1 tbsp vinegar (white wine or cider vinegar is best)
