Lahori White Qorma with Saffron Rice

The food of Lahore is renowned for being rich and flavourful - a fantastic mix of Punjabi and Mughul cuisine. In this white qorma, cashew nuts, poppy seeds and onion are blended to a silky-smooth sauce, which maintains its creamy white colour with the addition of aromatic whole spices such as mace, cardamon and cinnamon instead of ground spices. On the side we’ve got a contrasting sunshine-yellow, buttery saffron rice, charred cauliflower coated in a mustardy sauce, a fiery chilli and garlic chutney, and a tangy onion salad to cut through all the richness.

  • 500g diced chicken (thighs are best)

  • 20g sugar
  • 300g basmati or long grain rice
