- 500g diced chicken (thighs are best)
- 1 small cauliflower

- ½ pomegranate - seeds only (or 100g ready-prepared seeds)
- 2 lemons
- 75g butter or dairy-free alternative
- 1 tbsp tomato puree
- 30g unsalted cashew nuts or blanched almonds
- 20g sugar
- 300g basmati or long grain rice
