There’s always a bit of leftover cooked veg after the big day and here’s a delicious way to jazz it up! This would make a fantastic side dish to cold meats and pickles or you could even top it with a fried egg for breakfast!

Shopping List
  • 400g leftover green veg eg sprouts, cabbage, broccoli etc - cut into bite-size pieces
  • 100g chorizo or bacon - thinly sliced
  • 1 medium onion - finely chopped
  • 2 cloves of garlic - finely chopped
  • ½ lemon
  • 10g bunch of coriander (optional) - roughly chopped

Curry Legend Boxing day Curry with some extra beans. Somehow it came out a little watery but very tasty

Sprout Thoran with leftovers was the plan. But that is an insult. Nonya Chicken, Aubergine, Kosambari and Chilli Sambal with Mint Raita and salad with the Thoran made with cashews. Now that is much more a Taste Bonanza than insult. Lovely

Woah this looks like a seriously tasty flavour explosion! We love all the colours and on such a beautifully patterned plate too.. a treat for the tastebuds and eyes!
