Kofta - a dish originating in the Middle East - are a type of highly seasoned meatball, but vegetarian versions exist and can be made from pulses, vegetables or paneer cheese. Here we’re making kofta using mashed potato, grated carrot and paneer flavoured with green chilli, mustard and coriander. On the side there’s aloo methi - potatoes cooked with lots of methi (fenugreek) leaf which is the herb that gives Indian restaurants their distinctive ‘curry-like’ aroma. There’s also a fragrant pilau rice, a crunchy fresh cabbage salad flavoured with lemon juice and nigella seeds and a fiery carrot pickle.

  • 226g paneer cheese
  • 750g floury potatoes
  • 1 large onion
  • ¼ red or white cabbage
  • 2 large carrots
  • 2 tomatoes
  • Fresh ginger
  • 4 cloves of garlic
  • 10g bunch of coriander (optional)
  • 1 lemon
  • 50ml cream (any type)
  • 1 egg (any size)
  • 2 tbsp tomato puree
  • 2 tbsp flour (self-raising is best) plus extra for coating the kofta
  • 1 tbsp vinegar (white wine or cider vinegar is best)
  • 1 tbsp sugar
  • 300g basmati or standard long grain rice
  • Oil for frying (sunflower or vegetable oil is best)

I was so excited to eat this that I forgot to take a photo! Every bit of it was delicious. The pickle packed a real chilli punch. We fried the kofta in the deep fat fryer because it was quicker but other than that followed the recipes exactly as listed. A big winner
