The word ‘nonya’ is a respectful term for the female elder of the Peranakan community  - descendants of Chinese migrants who settled in Malaysia then intermarried with the locals. Here we’re making a Nonya duck curry containing incredibly tender meat in a rich and spicy sauce. We’re serving the curry with kerabu (a cucumber and onion salad flavoured with shrimp powder) and a fiery chilli sambal.

Tagine is actually the name for the conical cooking pot used in Morocco but it’s become known as the name for the gently spiced slow-cooked stew sweetened with dried fruit. The spicing is fairly subtle and aromatic using sweet spices like cassia, cardamon and coriander, and the sweetness of the tagine is balanced with a fiery harissa paste on the side.

WHOLE SPICES: Red chilli, star anise

SAMBAL SPICES: Chilli flakes, chilli powder, tamarind powder (tamarind, cornstarch), toasted cumin

KERABU SPICES: Chilli flakes, shrimp powder, onion powder, kaffir lime leaf

HARISSA SPICES: Paprika, chilli, caraway, coriander, cumin, garlic, mint, rose petals, salt, red pepper flakes

TAGINE SPICES: Allspice, coriander, cardamon, cassia, paprika, turmeric, chilli flakes

COUSCOUS SEASONING: Mint, coriander, parsley, garlic, onion, sea salt

MALAYSIAN NONYA CURRY

  • 2 duck or chicken legs 
  • 1 large red onion
  • 4 cloves of garlic 
  • Fresh ginger - finely chopped to make 2 tsp
  • 10g bunch of coriander 
  • ½ cucumber
  • 1 lime
  • 2 tsp sugar
  • 200ml full fat coconut milk (½ a standard sized tin or you can buy as a sachet)
  • Rice for 2 to serve

MOROCCAN TAGINE

  • 500g mixture of root veg (e.g carrot, potato, sweet potato, turnip) 
  • 1 onion
  • 2 cloves of garlic 
  • 10g bunch of fresh coriander or parsley 
  • 200g tin of chopped tomatoes (½ a standard sized tin)
  • 25g dried apricots, dates or prunes 
  • 75ml olive oil
  • 125g couscous

The fragrance of the tagine spices along with the sweet apricots gave a gorgeous depth of flavour to some chicken, carrots, garlic & celery just what was left in the fridge before a big shop, yum

The Tagine mix was an addition to my first Spicery Highlights box and was absolutely lovely. Cooked it with Pork fillet instead of Lamb. It was so tender and tasty.
