In Mexico ‘mole’ (pronounced mo-lay) is the name for a sauce made predominantly of chillies and a range of other ingredients from spices and fruit, to nuts, seeds and even chocolate! This version is called manchamanteles which literally translated means "tablecloth stainer" due to the addition of annatto seeds which create a bright red oil. Ground ancho and pasilla chillies are also added along with cinnamon, charred vegetables and pineapple resulting in a deliciously rich and fruity sauce.

4 chicken legs or large thighs or 3 large courgettes for a veg version
1 medium red onion
2 cloves of garlic
½ medium pineapple (or 200g ready-prepared)
Sour cream to serve (optional)
Rice for 4 to serve
