Manchamanteles Mole with Jalapeno Pickled Onions
In Mexico ‘mole’ (pronounced mo-lay) is the name for a sauce made predominantly of chillies and a range of other ingredients from spices and
fruit, to nuts, seeds and even chocolate! This version is called manchamanteles which literally translated means “tablecloth stainer” due to the addition of annatto seeds which create a bright red oil. Ground ancho and pasilla chillies are also added along with cinnamon, charred vegetables and pineapple resulting in a deliciously rich and fruity sauce.

- 1 medium red onion
- 2 cloves of garlic
- ½ medium pineapple (or 200g ready-prepared)

Delicious Mole with spicy onions and some tasty fiiineapple on the side. Yuuum!
Loved the jalapeno onions but not so sure about the spicing of the mole, and found it a bit grainy.

Once again the meal was amazing! We loved the pickled onions and the chicken was sooo tender! Not as spicy as others weve had so that was a nice change!

From the Taco Legend book I made Manchamanteles Mole, Sonoran Beans, Arroz Verde and corn tortillas. The Mole tastes incredible with a real freshness from the pineapple and a deeply spiced but not hot spicy flavour. The Sonoran beans are maybe one of the best things I have ever eaten ever. Simply amazing with the tang from the cheese and the chillis soaked in the lime juice.

The Mole was fairly bland compared to what we were expecting but we enjoyed the pickled onions. This one takes after its name and is definitely a table cloth stainer!
