In Mexico ‘mole’ (pronounced mo-lay) is the name for a sauce made predominantly of chillies and a range of other ingredients from spices and fruit, to nuts, seeds and even chocolate! This version is called manchamanteles which literally translated means “tablecloth stainer” due to the addition of annatto seeds which create a bright red oil. Ground ancho and pasilla chillies are also added along with cinnamon, charred vegetables and pineapple resulting in a deliciously rich and fruity sauce.

From the Taco Legend book I made Manchamanteles Mole, Sonoran Beans, Arroz Verde and corn tortillas. The Mole tastes incredible with a real freshness from the pineapple and a deeply spiced but not hot spicy flavour. The Sonoran beans are maybe one of the best things I have ever eaten ever. Simply amazing with the tang from the cheese and the chillis soaked in the lime juice.
I think this is the first recipe we didn't enjoy. I am not sure if I did something wrong but the chicken was very bland and the onions sour with no taste from the jalapenos. It's a shame bit considering how many amazing recipes we tried I guess sooner or later we would come across one we didn't.
