Mango Hot Sauce
This fruity hot sauce balances well with the fragrant spices and sweetness of Caribbean curries.
Also works a treat with: Replacing the mango with a mixture of pineapple and papaya

This fruity hot sauce balances well with the fragrant spices and sweetness of Caribbean curries, and makes an interesting change from the usual chilli sauce (known as pepper sauce) found throughout the region.
It also doubles up as a marinade for fish and meat!

- 1 medium mango or 200g ready-prepared - cut into bite-size pieces
- 1 red chilli - finely chopped (seeds removed if you prefer less heat)
- 1 lime
- 1 tsp sugar
