The rich curried beef broth is thickened with sweet potato and the dish topped with boiled eggs, coriander, crispy shallots and fresh coriander.

Shopping List
  • 500g diced beef
  • 200g shallots or 1 large red onion - ½ roughly chopped, ½ thinly sliced
  • 2 cloves of garlic - roughly chopped
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 2 lemongrass stalks - thinly sliced
  • 10g bunch of coriander - roughly chopped
  • 1 lime
  • 250g sweet potatoes - peeled and cut into bite-size pieces
  • 2 eggs (any size)
  • 250g dried egg noodles
  • 130ml oil (sunflower or vegetable oil is best)
  • 1 tbsp sugar

Was so dubious about this dish at first but my gosh I didn’t need to worry! It was so tasty! Made it slightly less brothy by accident but was still super delicious.

That egg looks perfect, and the vibrant addition of green on top really completes the dish! It's great to hear that this meal was a pleasant surprise for you!

No beef in the freezer so used a pack of sausages and added sweetcorn and peas. Tasted delicious and now waiting for the noodles and boiled eggs to finish it off. Yet another wonderful free sample from The Spicery - Thank you.

Cooked for two hours, using supermarket beef, which was surprisingly tender! Have never cooked with lemongrass up to doing so with this recipe, but it produced a delightful meal, combined with fresh ginger, lime and the spice mix. I topped the dish with crispy battered shallots, another (tasty) first, and a boiled egg. Highly recommended!

We hope you enjoyed your first time cooking with lemongrass - it's so fragrant, and really adds a gorgeous, aromatic flavour to the dish! It's great to hear that your beef was lovely and tender too. Brilliant job!

Great free sample this month, warming citrusy Asian noodle soup made with carrots and broccoli for a veg version. Made a delicious’Cauliflower 90’ from Curry Legend Veg on the side too. Always better than getting a takeaway!
