Mermez is a Tunisian one-pot stew, gently flavoured with paprika, caraway, cumin and garlic, plus a hint of exotic and fragrant spices including cinnamon, cardamon and rose. While the ingredients and cooking process are very simple, the key is to use plenty of onions and olive oil to make the sauce really rich and delicious.

A really nice dish to do, so.easy to make meant that we could just set it going and forget. Simple ingredients meant we didn't need to buy anything in and great summer dish with the salad !

Yum - this looks like a perfect, vibrant, summery meal! Great job, Liam, and we're so pleased to hear that you found it nice and simple to make too!

We adapted this recipe for the slow cooker using half a kilo of diced braising steak. The results, served up with flatbreads, were incredible!

Looks like a wonderful recipe for these Autumn evenings - plus the flatbreads look fantastic!

This is a simple and satisfying stew. It is fragrant, delicately spiced and comforting. It's just what you need in these dark and cold winter months.

Looks like a magnificent Mermez, happy spicing!
