Mexican flavours go really well with charred veg so we’re starting this meal with elote – grilled corn on the cob covered in rich cheese topping enlivened with smoky chilli flakes. For the main we’ve got yellow mole (pronounced mo-lay). Mole, meaning ‘sauce’, is one of the most iconic dishes of Mexico, particularly in Oaxaca, and this less common yellow variety is one of the region's 7 classic moles.

Fresh chillies are combined with aromatic spices, annatto and Mexican oregano for a deep, warm flavour. The mole tops homemade tortillas piled with grilled courgette, refried beans and smoky charred vegetable salsa. On the side we’ve vivid pink pickled onions made with habanero chilli, along with cooling sour cream.

  • 3 medium courgettes
  • 4 corn on the cob
  • 5 tomatoes
  • 2 small red onions
  • 6 cloves of garlic
  • 10g bunch of coriander
  • 2 limes
  • 150g sour cream
  • 80g feta, Caerphilly or Lancashire cheese - crumbled
  • 2 x 400g tins kidney or black beans - drained
  • 140g polenta
  • 150g plain flour plus extra to roll

Mole outstanding, delicious smokey salsa. Elote worked well - great flavours. Found the tortillas hard compared to other boxes.

Your spread looks incredible - sorry that the tortillas were a bit of work, but hope you found it all worth it in the end!

A vegan take on Mexican Elote and Yellow Mole recipe. An excellent, easy to cook and delicious meal. I have substituted the sour cream for homemade vegan sour cream (made from cashews), it turned out to be a delicious, warming meal full of different flavors! In times of Covid, cooking delicious meals helps me deal with the inability to travel and taste new food. Make sure you have someone to share the food with as it turns out to be a real feast!
