Mexican flavours go really well with charred veg so we’re starting this meal with elote – grilled corn on the cob covered in rich cheese topping enlivened with smoky chilli flakes. For the main we’ve got yellow mole (pronounced mo-lay). Mole, meaning ‘sauce’, is one of the most iconic dishes of Mexico, particularly in Oaxaca, and this yellow variety is one of the region's 7 classic moles. Fresh chillies are combined with aromatic spices, annatto and Mexican oregano for a deep, warm flavour. The mole tops homemade tortillas piled with grilled courgette, refried beans and smoky charred veg salsa. On the side we’ve vivid pink pickled onions made with habanero chilli, and some cooling sour cream.

  • 150g sour cream
  • 80g white cheese (eg feta, Lancashire etc)
  • 2 x 400g tins of kidney beans, black beans or pinto beans
  • 140g polenta
  • 150g plain flour (plus extra for rolling)

Delicious flavours as always, but we felt that this had too many "sauces" and not enough "substance". The refried beans and courgettes were nice but overall the whole meal felt too "wet". It needed more protein and solid components. As I say, though, the flavours were gorgeous...

The Elote was really enjoyable and one we'd certainly make again, sadly the Yellow Mole was a bit disappointing. When everything was combined it had no real texture to it and just blended into one. Individual flavours were good but it needs something with a bit more "bite"

Sadly this menu was the least favourite of many that I have had from The Spicery. The starter was the best part of the dish and delicious, but I found some of the components in the main meal had no depth of flavour, particularly the courgette and re-fried bean elements. It was a shame, as it was fun to cook and normally the recipes are of a very high standard.

We're really pleased that you loved the starter of this meal, but so sorry to hear that the rest of the recipe didn't match up to previous boxes you've enjoyed. We appreciate your feedback, and will take a look at this recipe again!
