In Mexico a BBQ is known as a parrillada and all sorts of meats including chicken, pork, beef, chorizo and goat are grilled then served inside tortillas with an array of condiments. Here we’ve got juicy pork chops marinated in a seasoning that includes ancho, chipotle, arbol and pasilla chillies served with a spicy salsa verde and a refreshing chopped salad known as pico de gallo.
