Mirchi Chicken Night

Mirchi translates from Hindi as 'chilli' and it's a key flavour in this popular restaurant curry, the cooking technique for which is based on a bhuna. The curry relies on the flavour of rich and intense whole Kashmiri chillies to make a paste, a touch of fiery teja chilli powder in the chicken marinade, and optional fresh green chillies for those who want even more of a kick! On the side we've got a simple vegetable rice, tarka dhal, moreish pea and potato samosas, a sweet onion relish and a cooling carrot raita (just in case you’ve overdone it with the chilli!).

  • 500g diced chicken (thighs are best)
  • 250g floury potatoes
  • 2 medium carrots
  • 250g peas (fresh or frozen)
  • 2 onions
  • 2 cloves of garlic
  • 1-2 green chillies (optional)
  • 1 lemon
  • 200g natural yogurt (full fat is best)
  • 20g tomato puree
  • 1 tsp sugar
  • 250g plain flour
  • 200g red lentils
  • 300g basmati or long grain rice
  • Oil for frying (sunflower or vegetable oil is best)
