Shopping List
  • 1 large onion - roughly chopped
  • 2 cloves of garlic - roughly chopped
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 1 large carrot - peeled and cut into bite-size pieces
  • 250g mixed veg (eg cauliflower, peas, sweetcorn etc (fresh or frozen)) - cut into bite-size pieces if large
  • 25g butter
  • 1 tbsp tomato puree

There seemed to be so little to it that I expected it to be a bit bland BUT OH NO the Spicery got it so right again. I included some spinach and that worked but the mildness allowed the tastes to come through. Reminiscent of Veg Curries in North India. Sublime.

This looks so tasty and nourishing- the perfect winter warmer! Thanks for sharing and happy spicing!

A fabulous birthday FEAST with Tarka Dhal, Mixed Veg Curry, Date & Tomato Chutney and Brinjal Pickle, served with mini popadom, onion salad and chapati. Lockdown birthday... done right! :-) We bought the Curry Legends Cookbook and spices for our anniversary in May and are already on our second batch of spice blends!! Highly recommended.
