Moroccan Cumin Lamb Chops with Jewelled Couscous
Cumin mixed with salt is an important seasoning in Morocco, used almost as a salt and pepper substitute both in cooking and at the table. Here we’re grilling lamb chops until charred and crispy then sprinkling generously with the cumin salt, and serving them with some colourful jewelled couscous and spicy rose harissa on the side.

- Lamb Marinade: cumin, coriander, paprika, smoked paprika
- Couscous Spices: cumin, coriander, cinnamon, red bell pepper, allspice, green cardamon
- Harissa Spices: paprika, chilli, caraway, coriander, cumin, garlic, mint, rose, salt

- 8 lamb chops (about 700g total weight)
- 2 cloves of garlic
- 20g parsley, mint or coriander
- 1 lemon
- 50g pomegranate seeds
- 200g couscous
- 50g dried fruit (eg raisins, dates, apricots etc)
- 30g nuts (eg almonds, pistachios, walnuts, hazelnuts etc)
- 105ml extra virgin olive oil
- Mixing bowl x 3
- Small frying pan
