This month, New York’s iconic triple-decker club meets a favourite Mumbai street food, the Bombay sandwich. We’ve got a spicy tandoori chicken layer with sweet mango chutney and red onion, and a cheese, bacon, tomato, green chutney and ranch raita layer - cutting it into triangles is obligatory! On the side, in place of chips/crisps we’ve got aloo tikki, delicious spiced potato fritters served with a tangy tamarind chutney and a refreshing lettuce wedge salad served with more creamy ranch raita dressing.

Aloo Tikki Spices: coriander leaf, green chilli, green bell pepper, turmeric, cumin, coriander, black cardamon, black pepper, green cardamon, ginger, cinnamon, cloves, mace, bay, nutmeg

Chaat Masala: amchur, salt, chilli, cumin, black pepper, coriander, ginger, ajowan, mint, asafoetida

Tamarind Chutney Blend: tamarind (tamarind, cornstarch), amchur

  • 500g skinless, boneless chicken thighs
  • 8 rashers of bacon (any type)
  • 500g floury potatoes - peeled and cut into bite-size pieces
  • 1 small red onion - very thinly sliced
  • 2 tomatoes - thinly sliced
  • 1 iceberg lettuce - cut into wedges
  • 25g bunch of coriander - finely chopped
  • 1 lemon
  • 1 medium mango (or 200g ready-prepared) - roughly chopped
  • 300g natural yogurt (full fat is best)
  • 150g cheddar cheese - thinly sliced
  • 100g mayonnaise
  • 115g sugar
  • 2 tbsp flour (cornflour is best)
  • 3 tbsp vinegar (white wine or cider vinegar is best)
  • 12 slices of white bread

Delicious recipe and spices! We used tofu and seitan instead of chicken and bacon. Tasty!

Never been disappointed with any spice boxes but this was so tasty and nice to have a fusion of 2 cuisines. Clean plates from adults and children

Great flavours we loved all the different chutneys. This was a little messy to eat but tasted amazing. Will definitely make this dish again.
