This month, two iconic sandwich recipes join forces; the club sandwich - thought to have originated at the prestigious Union Club in New York in the 1880's - meets a favourite Mumbai street food, the Bombay sandwich. Here, the club sandwich's traditional sliced, cooked poultry and warm white bread are replaced by spicy tandoori chicken and homemade naans, while mayonnaise is ditched in favour of chutney (two chutneys, in fact!) - sweet, sticky mango, and zingy coriander. On the side, in place of crisps or chips we’ve got aloo tikki - delicious spiced potato fritters - served with a tangy tamarind chutney and a refreshing lettuce wedge salad served with a creamy ranch raita dressing.

  • 4 large skinless, boneless chicken thighs
  • 8 rashers of bacon (any type)
  • 500g floury potatoes
  • 1 red onion
  • 2 tomatoes
  • 2 little gem lettuce
  • 25g bunch of coriander
  • 1 lemon
  • 1 medium mango (or 200g ready-prepared)
  • 2 green chillies (optional)
  • 2 cloves of garlic
  • Fresh ginger
  • 400g natural yogurt (full fat is best)
  • 100g mayonnaise
  • 115g sugar
  • 330g self-raising flour (plus extra for rolling)
  • 3 tbsp vinegar (white wine or cider vinegar is best)

Great flavours we loved all the different chutneys. This was a little messy to eat but tasted amazing. Will definitely make this dish again.

The messiest meals are often the best! Those naans look perfect, Alice - brilliant job!

Although very tasty we found the preparation an awful lot of faff for a meal which was very messy to eat. On the up side, my mission to teach my teenager to cook has resulted in him learning new skills by cooking this dish so may be the faff was worth it!

Made this vegetarian using Quorn (Paneer would also be lovely). A stellar recipe that was something different. We really enjoyed this one!
