USA meets India for a unique take on burger and chips...

Here we’ve got a fragrant minted lamb patty served inside a homemade soft brioche-like bun, flavoured with nigella and ajowan seeds which usually appear in Indian naan breads. On the side, instead of the usual coleslaw we have a crunchy carrot and cabbage South Indian salad known as kosambari and chips that are coated with a delicious toasted cumin salt.

There’s also a fantastic tomato & chilli chutney in place of ketchup, a herby cucumber raita instead of mayo and some pickled cucumbers to replace the gherkins. It’s all the bright, bold flavours and colours of Indian cuisine combined with an all American diner favourite.

NAAN BUN SPICES: Nigella seeds, ajowan seeds

LAMB PATTY SPICES: Mint, coriander leaf, cinnamon, black pepper, cumin, coriander, black cardamon, black pepper, green cardamon, ginger, cinnamon, cloves, mace, bay, nutmeg

TOMATO CHUTNEY SPICES: Nigella seeds, toasted brown mustard, chilli flakes, fenugreek, Kashmiri chilli

KOSAMBARI SPICES: Toasted mustard seeds, toasted cumin seeds, amchur, salt, chilli, black pepper, coriander, ginger, ajowan seed, mint, asafoetida

RAITA HERBS: Mint leaf, coriander leaf

PICKLED CUCUMBER SPICES: Red pepper flakes, green pepper flakes, mustard powder, turmeric

CUMIN SALT: Salt, cracked toasted cumin


  • 500g lamb or beef mince (meat with a higher fat content is best!)
  • 1Kg floury potatoes 
  • 1 small onion
  • 4 tomatoes
  • 1 cucumber
  • ¼ red or white cabbage
  • 2 medium carrots
  • 250g full fat natural yogurt (not Greek yogurt or set yogurt)
  • 100ml full fat milk plus extra for glazing the buns
  • 90ml vinegar (white wine or cider vinegar is fine)
  • 55g sugar
  • 2 tsp dried fast action yeast (1 sachet)
  • 210g bread flour or plain flour plus extra for kneading

This was easy to make and delicious, especially the tomato chutney. The whole family really enjoyed this.
