Naan Lamburgers with Mint Raita

Here we’ve got a fragrant minted lamb patty served inside a homemade soft brioche-like bun, flavoured with nigella and ajowan seeds which usually appear in Indian naan breads. On the side we have chips that are coated with a delicious toasted cumin salt, and instead of the usual coleslaw, a crunchy carrot and cabbage South Indian salad known as kosambari. There’s also a fantastic tomato & chilli chutney in place of ketchup, a herby cucumber raita instead of mayo and some pickled cucumbers to replace the gherkins. It’s all the bright, bold flavours and colours of Indian cuisine combined with an all American diner favourite!

  • 500g lamb or beef mince (higher fat content is best)
  • 1kg floury potatoes
  • ¼ red or white cabbage
  • 2 carrots
  • 1 small onion
  • 4 tomatoes
  • 1 cucumber
  • 250g natural yogurt (full fat is best)
  • 100ml milk (any type) plus extra for glazing the buns
  • 2 tsp dried yeast (a standard-size sachet)
  • 210g bread flour or plain flour (plus extra for kneading)
  • 90ml vinegar (white wine or cider vinegar is best)
  • 60g sugar

The best yet! Spent a whole afternoon in the kitchen slowly preparing the side dishes, which were all absolutely perfect (the pickled cucumber was gorgeous) The naan buns were a success, the lamburgers were delicious and the chips fluffy & tasty. Really enjoyed making this and enjoyed eating it even more. Definitely make this again

A nice change from my usual curry and rice/bread combo. A lovely juicy minty lamb burger with a nice light bun, which was still substantial enough to hold everything together. Finished off nicely with a creamy raita, sharp pickles, and a suitably spicy chutney.
