Nigerian Suya with Chilli Sauce
Suya (kebabs) are a very popular Nigerian barbecued street food featuring meat marinated in a dry rub of toasted peanuts and spices, such as chillies, pepper and ground ginger. Each malam (or street vendor) will have a special blend with its own unique flavour, fragrance and texture. Ours includes a trio of chillies - fruity habanero, cayenne and a tongue tingling pepper - as well as garlic, paprika and black pepper. It’s served with rice, a simple salad and a hot pepper sauce to round off the meal.

500g beef steak (any type)
75g salted, roasted peanuts
30g dry breadcrumbs or plain crackers (any type)
1 tsp tomato puree
300g basmati or standard long grain rice (not easy cook)
