The powerful flavour of lavender is used in European
cooking in blends such as herbes de provence. It is also used in some North African blends
and is useful in both sweet and savoury cooking.
Infuse in a jar of sugar
to and use to gently scent desserts. Lavender is a classic flavouring in or accompaniment
to chocolate - infuse the flowers in a custard, cream or chocolate mix.
Add a couple of flowers to a cocktail for a summery flavour. Crush the
flowers and add to a marinade for seafood or lamb kebabs.
