Pambazo Cheeseburgers with Jalapeños and Chipotle Salsa

This month we’ve taken one of America’s greatest exports - the cheeseburger - and given it a fantastic Mexican twist. Our beef patty is flavoured with Mexican oregano and cumin and served inside delicious homemade pambazos (bread rolls soaked in salsa then fried until crispy). In place of classic gherkins we’ve got pickled jalapeños, ketchup is replaced with smoky chipotle salsa, a lighter version of burger sauce is made using sour cream, and finally the chips are topped with an ancho chilli salt. Best served with a chilled lager with a wedge of lime or a tequila chaser!

  • 500g beef mince
  • 1 red onion
  • 3 green chillies
  • 1 avocado
  • 3 tomatoes
  • 10g bunch of coriander (optional)
  • 2 limes
  • 150ml sour cream
  • 4 cheese slices (Monterey Jack is best)
  • 65ml vinegar (white wine or cider vinegar is best)
  • 2 tbsp sugar
  • 2 tbsp tomato puree
  • 198g tin of sweetcorn
  • 1kg oven chips (sweet potato are best) or make your own
  • 4 ciabatta or crusty bread rolls

Delicious spicy burgers with a pleasantly fresh salad salsa on the side. Definitely recommend sweet potato hommade chips with it. We subbed smoked cheddar for Monterey Jack cheese which was fantastic. Kitchen Carnage rating: mild.
