Parsi Dhansak with Tamarind Chutney
The Parsi community are Zoroastrians (an ancient religious sect) who fled Iran in the 10th Century and settled in western India where they became influential traders. They are famed for the skill and complexity of their cooking and dhansak is their most well-known dish with lots of deep, savoury flavours as well as plenty of spices!

- Dhansak Garam Masala: fenugreek leaf, coriander leaf, cumin, black pepper, nutmeg, star anise, cloves, black cardamon, tamarind (tamarind and cornstarch), coriander, green cardamon, ginger, cinnamon, mace, bay, chilli
- Dhansak Ground Spices: tamarind (tamarind and cornstarch), amchur, coriander, cumin, Kashmiri chilli, turmeric, fenugreek, yellow MUSTARD, cinnamon, black cardamon
- Tamarind Chutney Spices: tamarind (tamarind and cornstarch), amchur, chilli

- 500g diced lamb or use squash cut into bite-size pieces for a veg/vegan version
- 1 large onion
- 4 cloves of garlic
- Fresh ginger
- 10g bunch of coriander (optional)
- 3 tbsp vinegar (white wine or cider vinegar is best)
- 4 tbsp sugar
- 150g red lentils
- Rice to serve
- Large lidded pan
- Medium saucepan

The parsi dhansak was a real treat , the main curry was every bit as good as our local Indian restaurant and take away ,flavours simply poured out , we did top it off with a good handful of chopped coriander which lifted it to another level. The tamarind chutney unfortunately was not to our taste , we have had this before at our local which was less bitter than yours ,but as it is a side it did not make a great difference
