  • 500g diced lamb or use squash cut into bite-size pieces for a veg/vegan version
  • 1 large onion
  • 4 cloves of garlic
  • Fresh ginger
  • 10g bunch of coriander (optional)
  • 3 tbsp vinegar (white wine or cider vinegar is best)
  • 4 tbsp sugar
  • 150g red lentils
  • Rice to serve
